Cookie, cookie, cookie


Last night, alongside our vegan chili, I made oatmeal-flax-raisin-cranberry cookies from scratch using potato starch as an egg replacer and oil in place of butter. They are heavenly; moist, chewy and flavorful, without that gross sugar hit most cookies have. I'm pleased with the recipe and will definitely be making them again. I brought a plate of them to our friends' house last night and they had the plate back to me this afternoon! :)
